Lemon poppy seed cake
All around, the Middle Slovak region is a lot of poppy fields. Of course, not now in the winter. But when the poppies bloom,  it is so romantic and beutiful. Many people  grow poppies  in their own garden. Picking them, drying them and pouring them out is not an easy journey, but in the garden it just look  adorable.This year i still have like two kilograms left, so there will definetly be more cakes later. Lets start simple. Preparation of this cake takes just a few minutes, so you can manage to feed 2 kids, 2 adults and even clean up the dishes and sweep the floor in the meantime.
You will need:
2 cups flour
1 cup brown sugar
1 baking powder
3 tablespoons poppy seeds
zest of one lemon
2 eggs
1 cup milk
1/2 cup oil
First, mix all dry  ingredients and then add the eggs, oil and milk. Mix properly, pour into baking form, which is oiled and sprinkled with breadcrumbs, or you can use a baking paper. Bake in a preheated oven at 180 degrees for 50 to 60 minutes. If you are using a wide format, definitely for for less. Before removing from the oven, check with skewer stick in the middle. When the stick comes out clean, you’re done.
Now, when is cooler, you can just serve the cake with an icing sugar, or use this lemon icing, which makes it to stand out.
In one cup, mix together 1 spoon of boiling water, 1 spoon of lemon juice, 100 g of icing sugar. Mix well and pour it all over the cake.
