Potato cake

As we live in the village, we simply use own and local produce.Often it is a vegetable from our garden, or meat from our little farm. If we crave something different, we go to other local farms.But lets be honest, there is not always everything available around. I go shopping like every other mum.

From the start i wanted to show you something really simple and traditional, which makes our home smell fantastic and it all comes at a cheap price. Simply it is all i find in my cupboard. Most of you already know this recipe, there is many variations and shapes.

You will need:

1 kg potatoes peeled and shredded

about 100 -150 g of plain flour

bacon

pork lard

onion

garlic

salt, pepper, marjoram

Method:

Mix shredded potatoes with flour, shredded onion and garlic, add seasoning and marjoram. Pour it all on on well greased big baking tray. Cut the onion and bacon and sprinkle it on the top. My boys always cry for more bacon, so do not be tight on that. Preheat the oven on 200 degrees and bake it for about 45 to 55 minutes. It all depends on your oven.
